Caspian is our take on a Savoie-inspired tomme. We love the funky cheeses of Eastern France and have long wanted to give this style an American twist. This cheese has a natural, rippled rind covering a dual-textured interior; a gooey cream line envelops its friable center. Caspian shows an exciting, vibrant range of flavors. It has a bright, lactic herbaceous center that evolves into cultured butter and mushrooms on that cream line.
